Except in a few definitive instances like negative effects of industrial trans fats, food research tends to be infuriating. I read a lot of it during my masters program in health and human development (nutrition). Ideally at some point we can design studies that account for enough confounding variables to learn more from them. My sense is that gut microbiome differences currently render most human food research mostly useless.
