Agreed that carbs are problematic in large quantities. But reducing reliance on them isn't simple for many. Quality fat and protein cost way more, so supporting people with limited resources in accessing and choosing them requires food system changes. Big Corn will oppose all or most of them. And Secretary of Agriculture Tom Vilsack, the former governor of Iowa, seems unlikely to provide leadership. And that's key, since it would be no small feat to redesign American agriculture to deliver a lot more quality, especially fat and protein.
